  1. In a large pot heat olive oil over medium heat. Add celery, carrots and onion and saute 3 - 4 minutes, add garlic and sauté another 30 seconds. Add barely, chicken broth, bay leaves, rosemary, sage, thyme, marjoram. Then season with salt and pepper to taste. Bring everything to boil, reduce heat to low, cover and let it simmer until barley is tender. It should be about 50 - 60 minutes.
  2. Then add chicken and lemon juice. You can also garnish it with parsley, if you want.
