I would like to share with you my favorites chicken salad recipe. Quick and easy healthy meal. Have it for lunch or dinner. Take it to work! It is up to you how much of each ingredients to add. If you want to go lighter, use more lettuce and less of other ingredients. Most of the fats in this recipe are monounsaturated (Olive Oil, Avocado) or Polyunsaturated (Walnuts), which are good fats, because they are good for your heart, your cholesterol, and your overall health. Saturated fat (bad fat) comes mainly from cheese, so don’t go heavy on it.

Instructions
  1. Mix all the dressing ingredients together.
  2. Mix all the salad ingredients and add some dressing.
  3. You can can chicken into smaller pieces and mixed it into the salad or lay it on top. I usually have it with grilled chicken, but any other chicken will do. Even without chicken it taste good.

    This looks really good and I am anxious to try it. The usual recipes for chicken salad call for mayonnaise and I do not like mayonnaise so I usually will for go having it.
