Ingredients
- 1 cup Mushrooms diced
- 1/2 cup Carrots diced
- 1/2 cup Bell Pepper diced
- 1/3 cup Onion diced
- 1/3 cup Celery diced
- 1 Tomato diced
- 1/3 cup Frozen Corn
- 1/3 cup Frozen Green Pees
- 2 clove Garlic minced
- 1 tsp Dijon Mustard
- 2 tbsp Low Sodium Soy Sauce
- Your favorite seasoning to taste
- Salt to taste
- Pepper to taste

- Bake yams in 400 degree oven wrapped in foil for about 1 hour or until tender. You can also cook them on the stove in the water for about 15 (you will have to peel and cut them for cooking). After they are cooked you will have to process them with food processor or mash them with potato masher till they become creamy.
- Heat a large pan over med high heat and add coconut oil. Add ground turkey and cook until it changes its color. At the end add some Dijon mustard, soy sauce, your favorite seasoning, salt and pepper. Ones done transfer turkey on a plate.
- Heat a large pan over med high heat again, add coconut oil. Add onions and cook in for 1 min. Then add garlic, mushrooms, carrots, bell papers, celery and cook until soft. At the end add corn, green peas and tomatoes. Then add cooked turkey and mix everything together. It is also a good idea to taste everything and see if you need some more seasoning.
- Preheat oven to 400 degrees. You will need glass baking dish to bake everything in the oven. Feel the glass dish with turkey and veggie mixture first then top it off with mashed yams. Bake for about 20 minute. Enjoy!
