BEST BAKED CHICKEN EVAAAAAA
My papa likes to call it “beer” chicken, but I use Bud Light’s lime-a-rita. I guess thats still technicannly beer huh. LOL
Start with 1 whole chicken. Rinse and remove gizzards (i hate the gizzards, YUCK). Season WELL (that means plenty) with the following:
Adobo seasoning (or substitute a MIX of onion power, garlic powder, and salt)
Chipotle chille pepper
Cumin (5-6 shakes will be enough for the whole chicken, Cumin is strong)
Thyme
Chili powder (just to fill in the places where the chipotle chili didn’t catch)
Season back and front of chicken (obviously) and sit chicken upright. Now, put an open can of beer/lime-a-rita in the cavity of the chicken. It usually works best if you put it in from the bottom instead of through the neck hole (aw poor chicken).
Don’t put the can in COMPLETELY full.. take a few sips so it doesn’t spill while you’re adjusting the chicken. The grocery store has stands for chicken, but the first time I went to make this on my own I didn’t have one and made it work by sitting the chicken upright (picture below).
Cover chicken COMPLETELY. I use about 3 pieces of foil to make sure it’s sealed. Juicy chicken must be covered!!
Bake at 350 for no longer than an hour and a half- hour and 45 minutes (for 5lb chicken). You’re baking 20 minutes per lb, give our take 15-20 minutes.
Remove from oven, remove foil for cooling. Enjoy!
(P.S. i have way too much fun playing with the chicken before I put it in the oven. I posititoned the wings on the hips like she’s saying, “Are you realy about to cook me Krystal?” LOL
