Ingredients
- 2 lbs Chicken Breast cooked and shredded
- 2 tbsp Olive Oil
- 1 1/2 cups Celery chopped
- 1 1/2 cups Onion chopped
- 1 1/2 cups Carrots chopped
- 2 cloves Garlic minced
- 4 (14.5 oz) cans Low-Sodium Chicken Broth (you can add more if you wish)
- 3/4 cup Pearl Barley uncooked (I also like to use red barley)
- 1 tsp Dried Sage
- 1/2 tsp Dried Rosemary
- 1/2 tsp Marjoram
- 1/2 tsp Thyme
- 2 Bay Leaves
- Salt to taste
- Freshly Ground Black Pepper to taste
- 1 tbsp Lemon Juice (fresh)
- Parsley (optional)

- In a large pot heat olive oil over medium heat. Add celery, carrots and onion and saute 3 - 4 minutes, add garlic and sauté another 30 seconds. Add barely, chicken broth, bay leaves, rosemary, sage, thyme, marjoram. Then season with salt and pepper to taste. Bring everything to boil, reduce heat to low, cover and let it simmer until barley is tender. It should be about 50 - 60 minutes.
- Then add chicken and lemon juice. You can also garnish it with parsley, if you want.
